Shrimp croquettes

Crispy on the outside and creamy on the inside, these shrimp-filled croquettes are a perfect appetizer or starter.
Ingredients
- 300 g cooked shrimp (finely chopped)
- 30 g butter
- 30 g flour
- 250 ml milk
- Salt, pepper, nutmeg
- 1 egg (beaten)
- Breadcrumbs
- Oil for frying
Steps
- Melt the butter in a pan. Add the flour and sauté for 1-2 minutes, stirring constantly.
- Gradually add the milk until you have a thick, lump-free béchamel sauce.
- Add the chopped shrimp and season with salt, pepper, and nutmeg.
- Let the mixture cool completely (preferably in the refrigerator for 1 hour).
- Form small croquettes, dipping them first in the egg and then in the breadcrumbs.
- Fry them in hot oil until golden brown. Drain on kitchen paper.
